Maya Spice Chocolate
This limited edition 71% dark chocolate was hand crafted from raw cacao organic sugar, cardamon and red chili in Topeka, KS. This limited edition bar infused chocolate bar is inspired by our recent trip to visit Maya family cacao framers in Belize and Guatemala. They use cacao with spices to create delicious drinks that are also used as medicine. We used Maya Mountain cacao grown by Maya families in south Belize, with its notes of honey, peach and citrus. The we added just the right amount of cardamon and red chili from Maya farmers in Alto Verepaz, Guatemala.

Tasting Notes: At 71% cacao the flavors are bold but approachable due to this origin’s natural sweetness. The initial flavors of honey, peach and even some citrus melt into nutty bitterness with fresh cut herbs from the cardamom. This finish is clean with just the right amount of warmth from the red chili. There is a mild astringency and lingering notes of strawberry a pleasant warming sensation.

Mayan Mountain Cacao
Crafted from cacao produced by the 420+ certified organic smallholder cacao farming families in the Toledo and South Stann Creek Districts. Most of these farmers are Q’eqchi’ and Mopan Maya and who have been producing cacao for generations. Mayan Mountain centrally processes all cacao at a post-harvest facility where three unique stages of sun drying create optimal flavor.

Cloud Forest Cardamon
Cloud Forest Cardamom is sweet and tart, reminiscent of summer fruits, fresh herbs and cut grass. It comes straight from a single-estate regenerative farm in the high-altitude cloud forests of the Alto Verapaz district in Guatemala. The fruit turns yellow as it ripens on the vine and has a softer and sweeter flavor that makes it a perfect upgrade to standard green cardamom.

Cobánero Red Chili
This rare Maya variety of chili pepper with a fierce, bright, slightly smoky heat and a lush, fruity, peachy aroma. The chilis are grown in the mountains around the city of Cobán, Guatemala. They're spicier than serrano peppers and in the same range as cayenne.
