Acopio is the name given to Cacao Verapaz's post-harvest facility where cacao produced by Maya family farms is gathered, fermented, and dried. This region, surrounding the Cahabon River, has rich mountain soil, high rainfall, and a long tradition of producing high quality cacao with large seeds and a unique flavor
profile.
The fine folks at Topeka Whiskey Society provided an empty Eagle Rare Bourbon barrel, then visited the PT's warehouse to select a coffee for barrel-aging. They chose Finca El Socorro Red Bourbon Washed, a Direct Trade coffee from Guatemala, and the PT's team devised a meticulous barrel-aging process that yields a smooth, sweet, and boozy coffee.
