Craft Chocolate Bar - Africa Blend, Madagascar/Ghana
This 70% dark chocolate was hand crafted from raw cacao and organic sugar in Topeka, KS.
In a market dominated by single origin bars, we created a blend of two cacaos from Africa, one from the east and the other west. ABOCFA is a farmer cooperative based in Suhum, Ghana, known for producing the highest quality traceable cacao in the region. This cacao’s classic rich and fudgy chocolate and peanut butter flavor is representative of what we have come to love in chocolate from west Africa. In refining, we blended in cacao from the Akesson Plantation in northern Madagascar's Sambirano River Valley. This cacao has a wonderfully complex set of fruit flavors with the strongest notes being chocolate, cherry, raspberry and raisin. These two cacao's couldn't be more different but together they make a complex set of flavors and aromas. The bar starts with the aroma of berries with and oak. Because the ABOCFA cacao has a lower cocobutter content, this bar has a firm mouth feel. The initial chocolate fudge and peanut butter taste temper the berry and cherry acidity of the Madagascar cacao. There is mild astringency and the bar finishes with a pleasant memory of fruit.
This craft chocolate is vegan friendly and has been processed in a gluten, dairy and nut free kitchen.
