- [Craft Chocolate Bar - Piura Blanco, Peru](https://www.hazelhillchocolate.com/c/products/craft-chocolate-bar-piura-blanco-peru): Piura Blanco - Peru This 70% dark chocolate was hand crafted from raw cacao and organic sugar in Topeka, KS. Piura White cacao come from the Piura department, situated in the north desert coast of Peru. The cacao comes from the Cooperativa Agraria Norandino which is made up of a few hundred small-holder farming members and specifically comes from the Piura and Ayabaca provinces. This origin has historically been a prized and valued cacao. The region is extremely unique for cacao in general. Typical cacao trees grow in tropical/jungle climates…. However, in Piura, this is not the case. Piura is a desert. It is dry, arid, and completely different soil than that found in the jungle. Usually in Peru the jungle is separated from the desert coast by the mountain ridge of the Andes, however in north of Peru there is a small section where the mountains are low, allowing the amazon jungle to flirt directly with the desert coast. This geographic shallow mountain pass is called “Paso de Porculla” – the lowest point in the Andes (2137 meters above sea level). The cacao is produced by Bertil Akesson, the owner of 'Akesson Plantation', Akesson produces this delightful cacao in northern Madagascar's Sambirano River Valley. His family also produces fine pepper, and other spices. The cacao has a wonderfully complex set of fruit flavors with the strongest notes being chocolate, cherry, raspberry and raisin. If you taste slowly and deeply, you’ll pick up the aroma of fruit blossoms. Genetically, our Sambirano is a Trinitario variety with roots in the Caribbean Island of Trinidad. - [Craft Chocolate Bar - Semuliki Forest, Uganda](https://www.hazelhillchocolate.com/c/products/craft-chocolate-bar-semuliki-forest-uganda): Semuliki Forest This 72% dark chocolate was hand crafted from raw cacao and organic sugar in Topeka, KS. Located in Bundibugyo District in Western Uganda, Semuliki Forest National Park is one of the newest national parks in Africa. The park receives almost 50 inches of rain per year and has one of the richest areas of floral and faunal diversity in Africa, with bird and butterfly species being especially diverse. Semuliki Forest cacao is grown by 1,002 organic smallholder farmers, 52% of whom are women. Due to the cooler wet climate, this cacao box ferments from 5.5-6.5 days creating a unique milky flavor note. In Kokoa Kamili’s first year alone Kilombero farmers received the highest prices in Tanzania for their cocoa. Today, Kokoa Kamili works with nearly 3000 smallholder farmers, most of whom farm between 0.5-2 acres of cocoa. Kokoa Kamili pays a premium--well above the market rate--to farmers for their ‘wet’ cocoa, and conducts its own fermentation and drying. By using a carefully controlled fermentation and drying process, Kokoa Kamili can produce more consistently higher quality cocoa beans. This method gives farmers a reduced workload, along with greater compensation. Kokoa Kamili also distributes cocoa seedlings to farmers in the community. In the past three years, they have aided in the planting of over 140,000 trees. Kokoa Kamili is situated in the Udzungwa Mountains National Park, an area known for its abundance of bird and mammal wildlife. It is most famous for the eleven different primate species, bird life, and is one of three remaining sites that support Savannah Elephants in a mountainous environment. Current estimates say that 2,000 elephants reside in and around the Udzungwa area.
