Our bar is 70% has some bold flavors. It starts with bright notes of fresh berries and lemon. These yield to turmeric and nutmeg spice balanced with tannin's like a full bodies red wine. The finish has a modest astringency with lingering taste of fried fig, it's just enough to prime your pallet for the next bite.
Acopio is name given to Cacao Verapaz's post-harvest facility where cacao produced by Maya family farms is gathered, fermented and dried. This region, surrounding the Cahabon River, has rich mountain soil, high rainfall and a long tradition of producing high quality cacao with large seeds and a unique flavor profile.
